October is a crazy busy month for me, so I have asked some great blogging buddies and friends to help me out with some posts and keep things fresh! Today I have Kristen from Maniac Mom (all of her social media contacts are at the end!) sharing her scrumptious Banana Bread with Chopped Walnuts! Our house is full of banana bread lovers, so I am absolutely looking forward to giving this a try soon!
I love baking. There’s no way around it. If I could bake all day long, I would die happy. And my favorite time of the year to bake is Fall.
A lot of people wonder why I don’t say Christmas. As a closet baker, it would make sense. You think of baking, you think of holiday cookies, holiday pastries, holiday pies, etc.
Not me. I hear baking and I think of cool days eating homemade bread. I’ve only recently started baking bread, but I have fallen in love with it. And so has my husband. (Just ask the five pounds he’s put on!)
My favorite by far is my banana bread topped with chopped walnuts. It makes my house smell wonderful, it’s quick and easy, and oh-so yummy!
What You’ll Need:
2 cups of sugar
1/2 cup of butter
3-4 ripe bananas mashed (I don’t like a super banana flavor, but if you do, you can use up to 6)
1/2 cup of milk
1/2 cup of sour cream
4 large egg whites
4 cups of flour
2 teaspoons baking soda
1 teaspoon salt
1 1/2 cups chopped walnuts, divided
Bake It Up:
Preheat oven to 350 degrees and spray two bread pans with non-stick spray.
In a standing mixer, mix sugar and butter together.
Add in bananas, milk, sour cream, and egg whites.
In a separate bowl, combine flour, salt, and baking soda.
Slowly add to banana mixture.
Pour half of mixture into each bread pan and cover in walnuts.
Bake for 1 hour.
Let cool for 15-20 minutes before removing from pan.
See? Easy peasy! This makes a great afternoon snack or dessert (just add a small scoop of vanilla ice cream and drizzle with chocolate).
Seriously… So good.
