Coconut Milk Chocolate Mousse

One of the hardest parts about being on a specific/specialized diet like Paleo or the Mediterranean for me is no dessert or tasteless desserts.  I am a dessert addict as you may be able to tell from my Count Chocula Marshmallow Brownies, Baked Brown Sugar Peaches, and Peanut Butter Chocolate Chip Baked Ravioli, but sometimes I try to behave.

This is my favorite healthy dessert from one of my favorite blogs, Chocolate Covered Katie.

Creamy.

Chocolatey.

Just sweet enough.

There are only 4 ingredients, but about 24 hours of hands-off prep work.

– Coconut Milk (cream)
– Honey
– Vanilla Extract
– Cocoa Powder

The day before you want to make this mousse pop your can of full fat coconut milk into the refrigerator. This will give it time for the milk and the cream to separate. I keep my coconut milk in the fridge so that I can make mousse whenever the mood strikes me!

1) Carefully scoop the cream away from the milk (which makes smoothies super tasty!). You should have about half a can’s worth of cream.

2) Next add the cream, a splash of vanilla, a squeeze of honey, and 1/4 cup of cocoa powder to your mixer bowl. Give it a good mix with the whisk attachment.

3) Enjoy!

I think my favorite part of this recipe is how simple it is. It makes a simple, delicious, and healthy dessert that is perfect for a special occasion…or Thursday night.

    I remember my brief attempt at the Atkins diet (ha!). I’d put a couple tablespoons of heavy cream in a bowl, sprinkle a tiny amount of cocoa powder on top, then whip til fluffy.

    As you might be able to guess, I didn’t last long on Atkins. It’s the only “diet” I’ve ever tried. 🙂

    My mouth is salivating right now. I love that this recipe is only four ingredients. Since I’m vegan I would do a simple swap of agave or stevia for honey and cacao for cocoa. YUM. I’m going to try it and will get back to you.

      Haha! You will have to let me know how it is! We love this recipe because it is acceptable for my husband’s heart healthy diet that his doctor put him on in December…he’s never been much of a sweets person, until they were taken away!

    It’s been a long wait … I’ve been avoiding sugar & limiting carbs for 10+ years … but Pillsbury seems to have really cracked the code. I’m not much of a cook, so the hardest part was always having to make my own desserts from scratch — not anymore!! They’re not marked low-carb, but Pillsbury sugar-free brownie mix is amazing … taste like ‘the real thing’! Their sugar-free cake mix is also very tasty, but a little too carby for this quirky body of mine. They’re great options for a potluck-setting with people who turn their noses up at sugar-free foods … just don’t tell them, I promise you they won’t know the difference.
