Count Chocula Marshmallow Brownies

On date nights I like to leave something a little special for the kids and the babysitter. Sure, we had done a trip up the chip aisle at Publix, but what kind of woman would I be if I didn’t bake something πŸ˜‰ I knew that I wanted to make brownies, but I wanted there to be something a little special about them.

Then it dawned on me…Count Chocula!!

I decided to give my brownies a Count Chocula crust…and why not a marshmallow topping while I was at it? The kiddos MADE me buy a bag of mini marshmallows while we were shopping!

Let me know what you think!

Step 1 – Preheat the oven to 350 degrees.

Step 2 – Mix 3/4 cup of cocoa powder and 1/2 tsp of baking soda in a bowl.

Step 3 –Β Combine 2/3 cup of melted butter with 1/2 cup boiling water.

Step 4Β – Add butter/water mixture to the cocoa powder/baking soda.

Step 4 – Add in 2 eggs, vanilla, and 2 cups of sugar.

Step 5 – Mix togetherΒ 1 1/3 cups of flour and 1 scoop of protein powder.Β I do this before adding it to the mixture to make sure that the protein powder is blended well.

Count Chocula Marshmallow BrowniesStep 6 – Mix a cup or two with some melted butter. Not too much, but just enough to coat it. Then line the bottom of your baking dish.

Step 7 – Pour brownie mixture on top GENTLY! The cereal is going to try to shift around while you are spreading, so move slowly.

Step 8 – Sprinkle the top with chocolate chips and mini marshmallows. You do not need to cover it because the marshmallows are going to expand.

Step 9 – Bake for about 35-40 minutes before taking out and DROOLING!

Now, the cutting and plating of this dessert was a little messy, but I think the pictures came out okay…what do you think?

I had no intention of using London for my plating shots, but he jumped right in and was adorable, so I went with it! I was even able to catch his craziness on video!Β London Tells me a story about the Brownies.
