On social media over the last few weeks I was asking for your BEST cookie recipes and stories. I was doing this for my podcast, Universe Box, where we were discussing all sorts of cookies, sharing memories, taking a cookie quiz, and even performing a staged reading about the Cookie Crook.
Part of preparing for this show involved me making cookies! LOTS of cookies! I made 3 different types of cookies Brownie Thins, 3 Ingredient Peanut Butter Cookies, and Benne Crips and I enlisted my 5 year old to help me. It was fun!
Here is a clip from the show where my daughter Eliza helped me do some baking. (You can find the full episode HERE).
Here are some pictures from the adventure that was Peanut Butter Cookies and Benne Crisps! I wish I could show you some from the Brownie Thins, but those pics didn’t come out so hot.
These Peanut Butter cookies were SO easy to make!
Nom It doesn’t get much better than these little balls of yum!
Give them a quick criss-cross with a fork.
They came out perfectly!
And now for the Benne Wafers…and I hate to spoil the surprise, but these were an EPIC FAILURE for me! HA! The first struggle was not being able to find sesame seeds in bulk. Then I realized that I was out of parchment paper when it was time to bake. Lastly, upon cooking the last batch (after buying parchment) I realized I had been UNDERCOOKING the cookies.
This recipe makes A TON of cookies (when executed properly!) and I have it on good authority that they are awesome. I am totally going to try these again at some point because the batter was so velvety smooth that it just made me happy! I gave my good ‘ole KitchenAid mixer a workout last week!
So smooth! I am just in awe of the things that this mixer can do for me. It has changed my cookie life!
I folded the sesame seeds and flour into the butter and sugar mixture so that I didn’t loose the airyness.
FAIL FAIL FAIL!
Hahaha! I am sure that not having enough sesame seeds made this a fail for me! I will say that they were tasty…but not quite crispy as expected! I will let you know how they are when I retry them.
What is the last kind of cookie you made? Did they come out like you were expecting?
