Paleo Coffee Cake

Not too long ago I posted a picture on Instagram and my personal Facebook of a Paleo Coffee Cake that I made for an episode of Universe Box about COFFEE. I promised to post the recipe, but then completely forgot about it…until now. One of the Universe Box listeners wrote in saying they were searching my site for the coffee cake recipe and couldn’t find it.

Behold Paleo Coffee Cake based upon the Gluten Free Coffee Cake from Dr. Axe. (Note: Please excuse the not great pictures…I had already started baking when I decided to document!)

Ingredients

Cake –

  • 1/4 cup coconut oil
  • 1/4 cup(ish) honey
  • 1 egg
  • Splash vanilla extract
  • 1/2 c. coconut milk
  • 1 1/2 cup almond flour
  • Sprinkle cinnamon
  • 2 teaspoon baking powder

Topping –

  • 1/2 cup almond flour
  • 1 1/2 tablespoon coconut oil
  • Drizzle honey
  • Sprinkle cinnamon

 

1) Preheat your oven to 350 degrees and lightly grease your baking dish.

2) Add most of your wet ingredients (coconut oil, honey, egg, vanilla) into your mixer bowl and get them blended together.

3) In a side bowl mix your dry ingredients (almond flour, baking powder, cinnamon). Once mixed add the dry ingredients and the coconut milk to your mixer bowl and give it a whirl.

4)  Pour batter into your baking dish.

5) In a small bowl mix the topping ingredients to make a crumbly topping. Sprinkle on the top of your dish before popping into the oven.

6) Bake for 25-30 minutes (until a toothpick/knife comes out clean).

7) Let cool a few minutes before cutting. I have found when baking without traditional flour that this helps ensure that your creation doesn’t crumble.

This cake is absolutely the BEST Paleo baking that I have ever done. I tend to find that Paleo recipes  lean towards too dry or too wet. They just never taste like baked goods are supposed to.

Paleo baked goods also struggle to meet the kid seal of approval, but not this coffee cake! They gobbled it right up! I love making something healthy that is kid approved.

The night that I made this hubs and I needed to drink 4 cups of coffee for a taste test on our podcast and this coffee cake came in handy for helping us not get upset stomachs from sooooo much coffee late at night. You can check out the episode below if you want (and you do!).
